Fresh Sea Sausage

Fresh Sea Sausage (scientifically known as Urechis unicinctus) is a prized seafood delicacy native to the coastal waters of northern China and the Korean Peninsula. Despite its unusual appearance, this marine creature is celebrated throughout East Asia for its extraordinary texture and delicate oceanic flavor.

The sea sausage features a cylindrical, smooth body with a soft pinkish-beige to light brown exterior. When properly prepared, its texture is nothing short of remarkable - incredibly crisp, crunchy, and slightly chewy with a satisfying snap that no other seafood can replicate. The flavor is mild, subtly sweet, and distinctly of the clean sea, making it a perfect canvas for various seasonings and cooking methods.

Nutritionally, sea sausage is a powerhouse. It is exceptionally high in protein while being virtually fat-free. It contains significant amounts of collagen, which is beneficial for skin health and joint function, along with essential minerals such as calcium, phosphorus, iron, and zinc.

The most iconic preparation is Sea Sausage with Garlic Chives, a beloved Shandong specialty where briefly blanched sea sausage segments are flash-stir-fried with aromatic garlic chives and sometimes topped with scrambled egg. Other popular preparations include sea sausage rice bowls where the sea sausage simmers in a savory sauce over steamed rice, grilled sea sausage with salt and pepper, and hot pot preparations.
